TENDER POACHED CHICKEN BREAST, CRISPY THIGH

Ingredients

Corn bread pudding, collard greens, balsamic-maple jus


Preparation:

Breast is poached with buttermilk, thyme and garlic.
Thigh is pan fried until crispy.
Cornbread is pureed with veggie stock.
Collard greens are cooked with garlic, onions, champagne vinegar, red pepper chili flakes.
Sauce : chicken jus, balsamic, maple syrup.

Ingredients

Summer squash, wheat berries, peach jus

Preparation:

Pork is brined in sugar/salt for 2 days.
Seasoned with curry, salt, sugar. Seared and sliced
Summer squash is cooked with shallots, corn and heavy cream.
Wheat berries (the entire wheat kernel minus the hull) cooked in camomile tea.
Jus - peach, ham hock, pickled chili

Preparation:

Potatoes are mashed with chives and rolled into balls and deep fried.
‘Sweet 100’ tomatoes (cherry tomatoes) are marinated in sherry vinegar, sugar, salt
