TENDER POACHED CHICKEN BREAST, CRISPY THIGH

Ingredients

Corn bread pudding, collard greens, balsamic-maple jus


Preparation:

Breast is poached with buttermilk, thyme and garlic.
Thigh is pan fried until crispy.
Cornbread is pureed with veggie stock.
Collard greens are cooked with garlic, onions, champagne vinegar, red pepper chili flakes.
Sauce : chicken jus, balsamic, maple syrup.
